St. Thomas’ Hottest New Restaurant: The Easterly

For its relative size, we’re fortunate that our island home of St. Thomas has a surprisingly abundant array of excellent dining options. While we have several long-time favorites on our go-to recommendation list, we’re always particularly excited when a new restaurant comes onto the scene.

A few members of our team recently had the opportunity to check out one of St. Thomas’ newest arrivals, The Easterly. We had such an incredible meal, we wanted to share it with you to add to your must-eat list for your next visit to our island.

Located close to VI Ecotours in Red Hook, The Easterly describes themself as a “a shoreline culinary oasis offering innovative craft cocktails and wood-fired cuisine representative of the rustic Caribbean.”

We appreciated seeing their environmentally friendly measures such as using only biodegradable hay straws, and we especially loved the fact that they use locally sourced ingredients whenever possible.

Their menu consists of seafood dishes, fresh oysters, responsibly sourced meats, as well as options for vegetarians.

The next time you come spend the day with us adventuring in the mangrove lagoon, treat yourself to a decadent dinner at The Easterly to wrap up a perfect day in paradise.
